DeVeDe is a really simple Ubuntu app you can use to author DVDs. It supports a huge variety of video formats, including all of the formats supported by Mplayer. It has very few dependencies, and runs off of Python and PyGTK.
This application is really basic, so you won't be able to make fancy menus, but this is great for the times where you just want to pop in a DVD and have it play without much hassle. DeVeDe will create the disc image for you in both NTSC or PAL format as an ISO file, and you can just burn it to any media you would like with GNOME, K3b, Brasero, or any other burning application.
Installing DeVeDe is a breeze because it's included in the official application repository. Fire up Synaptic and search for devede, or run the following in your terminal of choice:
